Traditional Irish Music

Thank you in advance to anyone with suggestions.
So, a few times per year our family hosts a céilí. I have a small stage in my backyard and invite musicians and non-musicians to come play, eat, drink and enjoy. As these are getting a more and more popular, I was wondering if anyone has a set of generally accepted rules for such events.
This is at a private residence. Alcohol is present. And it is family oriented. I have yet to have problem with any musician as I have known them all personally. However, if some is invited by a guest and is a stage hog, or has some other issue, I figured it may be a good idea to have known rules of behaviour?

Rules are usually needed if you don't control your visitors' invitations directly or if you don't know everyone very well. I remember one incident with alcohol on one of the events that were organized by my close friend - thank God it ended well.
